DESSERT // FLORAL CHRISTMAS PAVLOVA RECIPE

Are you tired of having the same dessert every Christmas but don’t know what to make? Don’t worry, we have you covered! We are thrilled to have Kate of Tell Me Tuesday to share her Christmas Pavlova recipe. Her spin on her dad’s classic dessert is super easy, gorgeous, and delicious! This light and fresh dessert is perfect after a heavy meal and will definitely impress your friends and family. The Australian classic is sure to become a favorite at your holiday dinner. With beautiful berries and flowers topping the airy sweets, you won’t feel bad having seconds! This is also great for a last-minute dessert, with only a few ingredients and a couple minutes you will have a winner! Check out Kate’s recipe below:

“Here in Australia, the weather on Christmas day is hot, hot, hot. After a still and sleepless night, we all pour down to the beach at the crack of dawn to dive into the ocean. The water is always a perfect, crystal blue and the sandy shores are full of kids trying out their new surfboards, body boards, floaties, you name it! The stifling heat generally means one thing when it comes to the Christmas day menu: the oven stays off.  Hot roasts are replaced with light, fresh alternatives. Think cooked prawns served on ice with fat slices of lemon, glazed ham, loads of salads and (if you’re lucky) oysters and crayfish. 
In the sweets department, nothing says “Christmas Day” more than Pavlova. Still to this day, my dad is the one who makes the “pav” in our family, baking the meringue on Christmas eve. When it comes time to serve, he piles the chewy, marshmallowy base with ungodly amounts of whipped cream, fresh strawberries, and sliced banana. My interpretation of dad’s classic is a little more contemporary and a whole lot easier. Here I’ve used a good quality store-bought meringue as my base, but feel free to bake your own (Papa TMT would be proud)!”

CHRISTMAS PAVLOVA
Serves: 4
ingredients
  • 4 discs meringue
  • 300 ml (10 oz) thickened cream
  • 2 passion fruits, halved and pulp removed
  • 12 cherries
  • 8 strawberries, halved
  • 1 punnet raspberries
  • 1 pomegranate, seeds removed
  • Organic, unsprayed, edible roses petals
instructions
  1. Place 1 meringue disc in the bottom of each bowl.
  2. Top with cream and liberally scatter with berries.
  3. Scoop the flesh  from the passion fruit over the cream.
  4. Top with rose petals and serve immediately.
