Ooey gooey chocolate, nuts, AND blondie bars?! This delicious new twist on the classic blondie bar will definitely not disappoint. Leah from Truffles and Trends is sharing her amazing recipe with us to up our staple holiday treat! You will no doubt be the life of the party if you show up with these bad boys. We love that you can add whatever type of nuts that you want, or just as easily make a batch without for those who aren’t such a fan! Check out the yummy recipe below:
CHOCOLATE CHUNK NUT BUTTER BLONDIES
Serves: 8×8 dish/16 blondies
- ¾ cup brown sugar, packed (I like dark brown sugar)
- 1/3 cup coconut oil,* melted (measure in liquid form)
- 1 egg
- 1 tablespoon vanilla extract
- ½ cup creamy unsalted nut butter of choice (my favorite is pecan butter, second choice cashew butter)
- 1 cup flour
- ½ teaspoon salt
- ½ teaspoon baking powder
- ¾ cup chocolate, chopped (or chocolate chips)
- Optional: ½ cup nuts of choice, chopped
- Preheat oven to 350 F. Line an 8×8 square baking dish with parchment paper.
- Melt the coconut oil. Once melted, stir it with the brown sugar in a medium sized bowl.
- Mix in the egg and vanilla extract well. Stir in the nut butter and mix till smooth.
- Combine the flour, salt, and baking powder right over the wet ingredients and then mix everything together till just combined. Stir in chocolate (and nuts) last.
- Press the dough evenly into your prepared dish and bake for 23-25 minutes, until the top is barely golden and a toothpick inserted comes out clean. Don’t over-bake!
- Once blondies are cooled, slice into 16 squares.
*Use refined coconut oil if you don’t want a coconut taste in your blondies.
